While not primary focusing on oregano and the cuisines it's used in, the title of the blog is more a play on words from Oregon Trail as I journey on my road to opening up my own cafe/restaurant and hopefully no one gets dysentery along the way.
The type of cuisine I want to make is healthy global comfort food, so maybe "New Global Cuisine" - kind of the idea of New American in how it takes American comfort food and brings it into the modern setting. I want to rethink the way we eat these dishes that we love from different countries and regions and make my version of them healthier but still retain the same comfort and happiness of the original dishes.
Opening up my own cafe/restaurant as always been a dream of mine. I say it often, as many others do, but only a small fraction actually do anything about it. I don't want it to be just another flippant thought and though right now, I cannot fully immerse myself into opening one or am I experienced enough, I figured I would push myself through this blog to do some work in my spare time, little by little, to create new recipes and new flavors of dishes. And if the time comes that the dream of opening up a cafe/restaurant becomes a reality, then I can look back on this and figure out what would make the menu.
While this is primary for myself, if by chance you happen upon this, I welcome you along in this journey of mine and will share with you my many mistakes but hopefully some gems as well along the way.
